Maple Lemon Carrots

3 cups thinly sliced carrots
1/2 cup water
1 tablespoon sugar
1/2 teaspoon kosher salt
2 tablespoons polyunsaturated margarine
2 tablespoons pure maple syrup
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon grated lemon peel


Combine the carrots, water, sugar and salt in a heavy saucepan. Cover and cook over medium heat until the water evaporates. Add the margarine, maple syrup, lemon juice and lemon peel, heat and stir until the margarine is melted.
