Arugula and Tangerine Salad

1/2 cup walnuts halved
1/4 cup cashew nuts halved
1 large bunch arugula, coarsely chopped
2 large tangerine, peeled, seeded, and sectioned
8 fresh figs, quartered
1/2 cup sliced red onion
1/2 cup extra virgin olive oil
2/3 cup orange juice
1/4 cup sugar
2 tablespoons balsamic vinegar
2 teaspoons Dijon style mustard
1/4 teaspoon dried oregano
1/4 teaspoon freshly ground white pepper
1/3 cup crumbled Cambezola blue cheese


Toast the nuts in a non-stick skillet for 5 minutes until lightly browned.

Toss the toasted nuts, arugala, tangerine sections, figs and red onion in a large bowl.

Mix the olive oil, orange juice, sugar, balsamic vinegar, mustard, oregano and pepper in a covered jar and shake well until thoroughly mixed.

Drizzle with the dressing and sprinkle each serving with the blue cheese.
