Clean and trim the artichokes and place in one inch of water in a large saucepan, stems down. Cover and simmer for 30 minutes.
Combine the chicken stock, orange juice, cornstarch and salt and cook over medium heat until the mixture begins to boil and is thickened.
Halve the steamed artichokes, remove the choke and pour the sauce over the artichokes.
