This is the best Persian Yogurt Drink / Dugh recipe on the web!!
IRAN: Dugh is the beverage traditionally served with Iranian (Persian) kebabs. A close cousin of the drink in this section from Afghanistan, it's made with whole yogurt instead of whey and flavored with dried rose petals, available in Middle Eastern stores. Salted beverages may seem odd to most North Americans (not to mention ones with pepper), but they're uncannily refreshing.
_ c plain yogurt, whole-milk
_ tbs mint leaves dried, , plus a pinch or two for garnish
_ tbs dried rose petals, plus a pinch or tow for garnish
_ tsp salt, or more to taste
_ tsp black pepper, freshly ground, or more to taste
_ qt club soda
Ice cubes, for serving
Combine the yogurt, 1 tablespoon mint, 1 tablespoon rose petals, salt and pepper in a pitcher and stir to mix. Add the club soda. Stir gently to mix, adding more salt and pepper, if desired. Pour into tall glasses, over ice, and garnish each glass with a sprinkling of mint and rose petals.
