Indian Yogurt Cooler / Lassi

1 cup plain yogurt, whole-milk
1 1/2 tablespoons sugar, or more to taste
1 teaspoon rosewater
1/4 teaspoon cardamon, ground
5 Ice cubes, cracked with a mallet
1 teaspoon pistachio nut, chopped and unsalted, for garnish


Combine the yogurt, 1 1/2 tablespoons sugar, the rosewater, cardamom, and ice in a blender and blend until smooth. Taste for sweetening, adding sugar to taste. Pour into a tall glass, sprinkle the top with the chopped pistachios, and serve immediately.
