Egg Salad Buns

Ingredients

6 hard cooked eggs, peeled and finely chopped
1/2 cup diced celery
3 tablespoons pickle relish
3 tablespoons reduced-fat mayonnaise
12 mini sandwich hoagie buns split
3/4 cup canned shoestring potato

Directions:

1. Mix all ingredients except buns and shoestring potatoes in medium bowl.
2. Spread egg salad mixture on bottom halves of buns. Sprinkle with potatoes. Cover with top halves of buns. Wrap in plastic wrap refrigerate to grab and go.
