This is a great brunch dish. It is tasty when first made, it can sit around on low heat for awhile, and leftovers reheat well in the microwave. Use 50% power for reheating. This goes together fast so have everything ready to use when you start cooking.
1 pound raw turkey sausages
1 large onion, chopped
1 1/2 cups egg substitute
1 (15-ounce) can cream-style corn
1. Cut each sausage into 4 pieces (use kitchen shears if you have them).
2. Saute sausage and onions until sausage is no longer pink inside and onions are soft. A nonstick skillet works best for this.
3. Add the corn and egg substitute and scramble until set. It is ready to serve.
Balance with lower-fat dishes on days you use this recipe. *Not recommended for low-sodium diets.
