1/4 cup egg substitute
1 tablespoon corn oil
1/4 cup water
1/2 cup sesame seeds
2/3 cup whole wheat flour
1/4 teaspoon (pinch) salt
1 teaspoon paprika
6 chicken legs, skinned and separated at the joint (about 1 1/2 lb.)
1. In a small bowl, beat together the egg, oil, and water.
2. In a dish, mix together sesame seed, flour, salt and paprika.
3. Dip drumsticks into egg mixture, then into flour mixture and place on a baking sheet coated with nonstick vegetable cooking spray.
4. Bake at 400 for 25-30 minutes. Serve hot or cold.
Balance with lower-fat dishes on days you use this recipe.
