Serving size: one 1-inch slice
This bread tastes great with fruit or chicken salads.
1-3/4 cups chopped, pitted dates
1-1/4 cups boiling water
2-1/4 cups whole-wheat flour
1/2 cup chopped walnuts
1 teaspoon baking soda
1 egg substitute equivalent
1/2 cup unsweetened applesauce
2 tablespoons fructose
1 teaspoon vanilla extract or almond extract
1. In a bowl, combine the dates and boiling water; let stand for 15 minutes. Lightly coat a 9x5-inch loaf pan with nonstick cooking spray. Preheat the oven to 350 degrees.
2. In a large bowl, combine the flour, nuts, and baking soda. Add the egg, applesauce, fructose, and extract. Add the dates and mix well.
3. Pour mixture into the prepared pan and bake for 65 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan on a rack for 10 minutes. Remove from the pan and serve warm or cold.
