Banana Carrot Muffins

These muffins are moist, sweet, and full of good-for-you ingredients!


   1-1/2 cups whole-wheat or unbleached flour
   2 teaspoons baking powder
   1 teaspoon baking soda
   1/2 teaspoon nutmeg
   Pinch cloves
   2 egg substitute equivalents
   1/2 cup unsweetened applesauce
   2 tablespoons fructose
   1/2 cup low-fat buttermilk
   1/2 cup mashed bananas
   1 cup grated carrots
   1 teaspoon vanilla extract


1. Preheat the oven to 400 degrees. Combine the first 5 ingredients in a large bowl. Combine the remaining ingredients in a smaller bowl. Combine all ingredients together and mix well, but do not overbeat.

2. Spoon into muffin cups and bake for 20 minutes. Serve warm or at room temperature.
