Banana Carrot Muffins

Ingredients

1 1/2 cups whole wheat flour or unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
pinch cloves
2 egg substitute equivalents
1/2 cup unsweetened applesauce
2 tablespoons fructose
1/2 cup low-fat buttermilk
1/2 cup mashed banana
1 cup grated carrot
1 teaspoon vanilla extract

Directions:

1. Preheat the oven to 400°F. Combine the first 5 ingredients in a large bowl. Combine the remaining ingredients in a smaller bowl. Combine all ingredients together and mix well, but do not overbeat.

2. Spoon into muffin cups and bake for 20 minutes. Serve warm or at room temperature.
