Think biscuits have to be loaded with butter to taste good? Think again! This recipe uses margarine and chives for a wonderful flavor.
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons stick margarine
2 tablespoons fresh chives, chopped
1/3 cup low-fat buttermilk
1 tablespoon ;ow-fat milk (1%)
1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or spray with nonstick cooking spray.
2. In a medium bowl, whisk the flour, baking powder, and salt until blended. Cut in the margarine with a pastry blender or 2 knives until the mixture resembles coarse crumbs, 2-3 minutes. Add the chives and stir to blend. Add the buttermilk; stir until just combined (do not over-mix).
3. Turn the dough onto a lightly floured surface and knead 3-4 times. Flatten the dough to about 1/2 inch thick. Using a 2-inch biscuit cutter, cut out biscuits and place on the prepared baking sheet. With a pastry brush, brush the tops of the biscuits lightly with the milk.
4. Bake until lightly browned, about 15 minutes.
