2/3 cup red wine vinegar
2/3 cup water
1/4 cup tomato paste
2 tablespoons vegetable oil
2 tablespoons green onions chopped
2 tablespoons parsley chopped
2 teaspoons sugar
1 teaspoon paprika
1 teaspoon basil dried basil leaves, crushed
1/2 teaspoon thyme dried, crushed
1/2 teaspoon lemon juice
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/8 teaspoon salt
Place vinegar, water, tomato paste, oil, green onion, parsley, sugar, paprika, basil, thyme, lemon juice, pepper, garlic powder and salt in a blender container. Cover and blend at medium speed for 1 minute or until smooth. Pour into a jar with a tight-fitting lid. Cover and let stand for 30 minutes to develop flavor.
Shake before using. Serve over Chicken Topopo Salad or on mixed salad greens or cottage cheese.
