Wild Rice & Mushroom Soup

Ingredients

4 cups water
2 teaspoons salt
1 cup wild rice, uncooked
3 tablespoons olive oil
4 cups onions, finely chopped
10 cups vegetable broth, divided
3 cloves garlic, minced
1/2 cup brown rice, uncooked
1/8 teaspoon pepper
1/3 cup sherry or vegetable broth
4 cups mushrooms, thinly sliced

Directions:

Combine water and salt in a large saucepan over medium-high heat; bring to a boil. Add wild rice and simmer, covered, for 35 minutes. Drain and rinse wild rice well under cold water; set aside. Heat oil in a skillet over medium heat; cook onion for 10 minutes, or until softened and translucent. Add 6 cups broth, garlic and brown rice. Simmer, covered, for 20 minutes. Stir in pepper, sherry or broth, prepared wild rice, mushrooms and remaining broth. Simmer, uncovered, 15 minutes.
