Tortellini Soup


Serves: 8

Ingredients

1 cup onion, chopped
1 clove garlic, minced
1 tablespoon olive oil
1 (15-ounce) can crushed tomato
1 (9-ounce) package cheese tortellini, uncooked
1 (14 1/2-ounce) can chicken broth
1 tablespoon fresh basil, chopped
1 (9-ounce) package baby spinach
salt and pepper to taste

Directions:

In a saucepan, sauté onion and garlic with oil just until tender. Stir in tomatoes, tortellini, broth and basil. Simmer over low heat until tortellini is tender. Add spinach and continue to simmer 5 minutes longer. Stir in salt and pepper to taste.


Put felt scraps to use by turning them into snowmen package toppers. Assemble circles with a simple blanket stitch, just add a little batting to plump them up. Tie on a felt strip scarf and add a pompom on their caps.
