White Bean & Sausage Stew

Ingredients

6 Italian pork sausages links
1/4 cup water
1 tablespoon olive oil
1 onion, chopped
1 clove garlic, chopped
2 (15-ounce) cans great northern beans, drained and rinsed
1 (28-ounce) can chopped tomato, drained
1 teaspoon dried thyme
salt and pepper to taste

Directions:

Pierce sausages with a fork; place in a large non-stick skillet. Add water; bring to a boil over medium heat. Reduce heat to low; simmer for 10 minutes, turning occasionally, until water evaporates and sausages are browned. Transfer to a plate. Heat oil in skillet over medium-high heat. Add onion and garlic; cook, stirring often, about 3 minutes. Add beans, tomatoes and thyme. Transfer half of bean mixture to a slow cooker; arrange sausages on top. Spread remaining bean mixture over sausages. Cover and cook on high setting for 2 hours. Stir in additional water, if needed. Remove sausages; slice thickly and return to slow cooker for 2 additional hours. Sprinkle with salt and pepper.


Tree trimming is more fun with family & friends. Put a big pot of soup on the stove to simmer, and by the time the tree topper is in place, it’ll be time to sit down and enjoy dinner together.
