Mom’s Seafood Gumbo


Serves: 4
Total Calories: 400

Ingredients

1 onion, sliced
2 tablespoons butter
1 (16-ounce) can stewed tomatoes
1 green pepper, diced
1 clove garlic, diced
1/2 teaspoon salt
1/2 teaspoon cayenne pepper, or to taste
1 cup chicken broth
1 pound uncooked small shrimp, peeled and cleaned
1 (6-ounce) can crabmeat
1 tablespoon cornstarch
1/4 cup water
1 (10-ounce) package frozen sliced okra, thawed

Directions:

Place onion and butter in a microwave-safe 2-quart casserole dish. Microwave on high setting for 4 minutes, or until onions are soft. Stir in remaining ingredients except cornstarch, water and okra. Set aside. In a small bowl, dissolve cornstarch in water. Add to other ingredients; stir well to combine. Stir in okra. Cover dish with wax paper. Microwave on high setting for 25 to 30 minutes, stirring halfway through cooking time.
