Macaroni Pasta "Soup"

Serves: 4

Print this Recipe

4 servings (1 cup each)
Prep: 5 min
Cook: 10 min

1 package (7 ounces) elbow macaroni (2 cups)
   1 1/2 cups whole milk
   1/2 teaspoon salt
   1/4 teaspoon black pepper
1/4 cup butter or margarine, softened
1/2 cup shredded cheddar cheese (2 ounces)

1. Cook macaroni in 2-quart saucepan as directed on package-except cook 2 minutes less than recommended time; drain.

2. Return macaroni to saucepan. Stir in milk, salt and pepper. Heat just until mixture begins to simmer; do not boil. Remove from pan. Pour into heatproof bowl. Stir in butter until melted.

3. Sprinkle cheese over top just before serving.

Lois K. shares her Recipe "I had this soup often when I was a kid, and it is still a comfort food for my four grown children and grandchildren. I made it when other food didn't appeal and many times during and after radiation treatments when my digestive tract was in turmoil."

A NOTE from DR. GHOSH
Macaroni soup helps to relieve digestive discomfort and dry mouth. Mashed potatoes, noodles and cooked cereals are other choices that may help, as well. When suffering from dry mouth, try making your food moist by adding sauces or soaking dry, crisp foods like cereal until they get soggy.
