Mozzarella and Tomato Melts


Serves: 4

Ingredients

4 slices Italian bread, each 1 inch thick
8 ounces part-skim mozzarella cheese, sliced
2 medium tomatoes, thinly sliced
salt and freshly ground pepper to taste
1/2 cup pesto

Directions:

1. Set oven control to broil. Place bread on rack in broiler pan. Broil with tops about 4 inches from heat until golden brown turn. Divide cheese among bread slices. Broil just until cheese begins to melt.
2. Arrange tomatoes on cheese. Sprinkle with salt and pepper. Top with pesto. Garnish with fresh basil leaves if desired.
