This sweet compote is wonderful over pancakes or even as a dessert topping spooned over ice cream, pound cake or angel food cake. Even better-the lime juice and oranges keep the sliced banana fresh-looking.
1/2 cup sugar
1/2 cup water
2 tablespoons grated orange peel
2 tablespoons grated limes peel
4 bananas, peeled and sliced
2 oranges, peeled and cut into sections
2 tablespoons lime juice
1. Heat sugar and water to boiling in small saucepan over medium heat. Stir in orange peel and lime peel; boil 2 minutes, stirring occasionally. Let mixture stand 5 minutes.
2. Mix bananas and oranges with lime juice in medium bowl. Pour warm syrup over fruit. Serve fruit warm.
