Chicken Breasts with Tomato-Basil Butter

Ingredients

6 boneless skinless chicken breast halves (about 1 3/4 pounds)
2 teaspoons garlic pepper
1/2 cup margarine or butter, softened
1 tablespoon chopped fresh basil or 1 teaspoon dried
3 tablespoons tomato paste

Directions:

Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Sprinkle chicken with garlic pepper.
Cover and grill chicken 4 to 5 inches from medium heat 15 to 20 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut. Mix remaining ingredients. Serve chicken topped with margarine mixture.

Betty's Tip
Here's a tip for no-waste tomato paste. If a recipe calls for a small amount of tomato paste, try using tomato paste that is available in a squeeze tube, which can be refrigerated after being opened. Or, place extra canned tomato paste in a plastic bag and store in the freezer.
