Bake-Off® Contest 26, 1975 Grand Prize Winner
This is one of those simple recipes that makes such good eating everyone asks for the recipe. It combines a crunchy crumb-nut base with a moist, lightly spiced apple cake layer. A scoop of ice cream or whipped cream simply gilds the lily.
2 cups all-purpose flour
2 cups firmly packed brown sugar
1/2 cup margarine or butter, softened
1 cup chopped nuts
1 to 2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 cup dairy sour cream
1 teaspoon vanilla extract
1 egg
2 cups finely chopped peeled apples (2 medium)
Heat oven to 350° F. In large bowl, combine flour, brown sugar and margarine; beat at low speed until crumbly. Stir in nuts. Press 2 3/4 cups of crumb mixture in bottom of ungreased 13 x 9-inch pan. To remaining mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg; mix well. Stir in apples. Spoon evenly over base.
Bake at 350°F. for 30 to 40 minutes or until toothpick inserted in center comes out clean. Cut into squares. Serve with whipped cream or ice cream, if desired.
HIGH ALTITUDE - Above 3,500 feet: Bake at 375°F. for 25 to 35 minutes.
