Dijon Beef Stew

1 1/2 pounds stew beef, cubed
1/4 cup all-purpose flour
2 tablespoons oil
salt and pepper to taste
2 (14 1/2-ounce) cans diced tomatoes with garlic and onion
1 (14 1/2-ounce) can beef broth
4 carrots, peeled and cut into bite-size pieces
2 potatoes, peeled and cut into bite-size pieces
3/4 teaspoon dried thyme
2 tablespoons Dijon mustard


Combine meat and flour in a large plastic zipping bag; toss to coat evenly. Brown meat in oil over medium-high heat in a stockpot. Sprinkle to taste with salt and pepper. Add remaining ingredients except mustard. Bring to a boil; reduce heat. Cover and simmer for one hour, or until beef is tender. Blend in mustard.
