Chicken Comfort Casserole

Ingredients

1 (7-ounce) chicken-flavored rice vermicelli mix
4 boneless, skinless chicken breasts, cooked and cubed
1/4 cup butter
1/2 cup onion, chopped
1/2 cup green pepper, chopped
1/2 cup celery, chopped
2 (10 3/4-ounce) cans cream of chicken soup
1 cup shredded Cheddar cheese

Directions:

Prepare rice vermicelli mix according to package directions. Toss with chicken; set aside. Heat butter in a skillet over medium heat; sauté onion, pepper and celery until tender. Combine with rice mixture and soup; spoon into a greased 13"x9" baking pan. Top with cheese; bake at 400 degrees for 20 minutes.
