Chop up and save 1 1/2 cups of the leftover ham to use on Day 3, Scalloped Potatoes and Ham.

Peel 6 pounds of potatoes and cut into 1/4" slices. Half you will use in the Scalloped Potatoes and Ham recipe today. Put the remaining half of the potatoes to a large zip-lock bag, or bowl with tight lid and cover with water. Refrigerate overnight. (don't store longer than overnight or the potatoes will get soggy and brown.)

Prepare the Christmas cookies for Christmas Dinner. Make extra and share with neighbors. Store them in an airtight covered container to keep fresh to serve on Christmas day.

Prepare Gwen's Old Fashioned Beef and Potatoes recipe - rinse the potatoes you stored in the refrigerator and drain well. Use in the recipe as directed.

In preparation for the Lasagna on Day 5, Cook 4 pounds of ground beef. Remove 1 1/2 cups of the cooked ground beef to use in the Lasagna. Meanwhile, cook the sausage for the Lasagna. Drain and add to the 1 1/2 cups of cooked ground beef. Use the remaining ground beef in the Beef and Potatoes Recipe. While the Beef & Potatoes bake, prepare the Lasagna for tomorrow's dinner. Cover and refrigerate until ready to bake on Day 5.
