Gluten-Free Fresh Pasta
When I went gluten-free for health reasons, I wanted to continue making my own noodles and pasta. I found this recipe and it is so easy and tastes very good. And with only 2 ingredients, it is as easy as flour based pasta.
|200 grams||(7.04 oz or 1 3/4 cups) gluten free flour blend (+ more flour for kneading)|
Place flour in a food processor. Add eggs and process until a dough forms. On floured board, knead in extra flour until dough is easy to handle. Wrap in plastic wrap and let rest while getting pasta machine out (or rolling pin). Remove wrap and cut into 4 sections. Roll each section out on thick setting. Fold and re-roll several times. Change setting to 3 and roll again. Cut in half crosswise to make more manageable. Cut pasta in desired shape. Follow directions for pasta machine or roll out with rolling pin.
Add to boiling soup broth, or cook in salted water. Drain and add sauce or butter and herbs.
