South American Marinade

Yield: 1/2 Cup

Ingredients

3 cloves garlic finely diced
1/2 jalapeƱo pepper seeded and finely diced, with white membranes removed
1/2 onion thinly sliced (about 1/2 cup)
1/2 cup chopped fresh Italian parsley
1/4 cup cold pressed extra virgin olive oil
3 tablespoons freshly squeezed lime juice
1/2 teaspoon sea salt
1/2 teaspoon black pepper
Vegetable of choice

Directions:

1. Place all of the ingredients except the vegetable in a large bowl. Mix gently to combine.

2. Add the vegetable of your choice and let marinate at room temperature for at least 20 minutes. For a stronger flavor, leave the vegetables in the marinade for up to 1 hour before serving.

Tip . . .
Limes can be stored in the refrigerator for up to two weeks.
