Chilean Tomato Salad

Ingredients

1/2 medium sweet onion thinly sliced (about 1/2 cup)
1/4 cup cold pressed extra virgin olive oil
3 tablespoons freshly squeezed lemon juice
1 teaspoon sea salt
4 medium fresh tomatoes cut into 1/4 inch wedges
1 cup chopped fresh cilantro

Directions:

1. Place the onion, olive oil, lemon juice, and salt in a medium bowl and mix to combine. Let marinate for 2 hours at room temperature to allow the onion to soften.

2. Add the tomatoes and cilantro to the onions and mix. Serve at room temperature.

For a Change . . .
* Sprinkle 1/4 cup chopped kalamata olives, 1 teaspoon red chili pepper flakes, and/or 1/2 teaspoon cumin powder over the top of the salad.
