Brazilian Cucumber Salad

Ingredients

2 medium Large Hass Avocados
4 cucumbers peeled and diced
1/2 jalapeño pepper seeded and finely diced
1/2 cup South American Marinade

Directions:

1. Cut each avocado in half and scoop out the flesh. Discarding the pit, set the flesh and the 4 shells aside.

2. Place the cucumbers, pepper, and South American Marinade in a medium bowl and mix gently to combine. Let marinate for 1 hour at room temperature.

3. Scoop the marinated cucumber into the avocado shells and serve.

Tip . . .
Don’t throw away the flesh! Set it aside and use it to make Guacamole or any other recipe that requires avocado.
