Quinoa Salad


Serves: 4

Ingredients

3 cloves garlic diced
2 red bell peppers diced
3 cups sprouted quinoa
1 cup chopped fresh cilantro
1/2 cup cold pressed extra virgin olive oil
6 tablespoons freshly squeezed lemon juice
1 teaspoon sea salt

Directions:

1. Place all of the ingredients in a large bowl and stir by hand to combine. Let marinate for 1 hour at room temperature.

2. Transfer to salad bowls, serve, and enjoy!

For a Change . . .
* Before transferring to bowls, top the salad with 1 cup diced avocado and/or 1 cup diced tomato.
