Marinated Ginger Cabbage


Serves: 6

Ingredients

1/4 cup water
2 tablespoons grated ginger
2 tablespoons red miso
2 tablespoons freshly squeezed lemon juice
2 tablespoons Nama Shoyu or tamari soy sauce
1 tablespoon apple cider vinegar
1 head green cabbage shredded fine

Directions:

1. In a medium bowl, combine the water, miso, ginger, lemon juice, Nama Shoyu, and vinegar. Stir in the cabbage and let marinate for at least 2 hours at room temperature.

2. Serve immediately, or refrigerate until ready to serve.

For a Change . . .
* Use red cabbage, grated carrots, baby bok choy, or napa cabbage in addition to or in place of the green cabbage.
* Use other types of miso for a variety in flavor.
