Almond Cookies

Yield: 12-15 Cookies

Ingredients

1 cup oat groats
3 cups water
1/2 cup dates
1 cup raw almond butter
2 teaspoons organic almond extract
1 cup raw or untoasted whole almonds

Directions:

1. Place the groats in 2 cups of the water and let them soak over night, or for 12 hours. Rinse and drain the groats, then place them in a food processor.

2. Place the dates in the remaining 1 cup of water and let soak for 1 hour, or until soft. Drain the dates and place them in the food processor with the groats.

3. Add the almond butter and almond extract to the food processor and mix until smooth.

4. Drop the dough by rounded teaspoons onto Teflex dehydrator sheets. Press 3 almonds into each ball of dough.

5. Place the sheets in a dehydrator and dehydrate at 105°F for 24 to 36 hours, or until desired crunchiness is reached. Remove and serve.

For a Change . . .
* Sprinkle any or all of the following on top of the cookies before dehydrating: cacao nibs, crushed almonds, or dried coconut.

Studies have reported that almonds may help lower LDL (bad) cholesterol.
