Yield: 1 Cup

Ingredients

2 cloves garlic finely minced
1 shallot finely minced
1/2 cup freshly squeezed lemon juice
2 teaspoons finely chopped fresh cilantro
1 1/2 teaspoons sea salt
1/2 teaspoon freshly ground black pepper
1/2 cup cold pressed extra virgin olive oil

Directions:

1. Place all the ingredients except the olive oil in a jar with a lid (a Mason jar is good). Cover, shake well, and let sit for 15 minutes at room temperature.

2. Add the olive oil to jar, cover, and shake vigorously until the ingredients are well combined.

3. Use the dressing immediately, or refrigerate until ready to use. If refrigerating, allow the dressing to return to room temperature and stir vigorously before using.

FYI . . .
Leftover jam jars are perfect for making and storing dressings—and reusing them is a great way to recycle!
