"Orzo" with Arugula, Peas, and Tomatoes


Serves: 6
Total Calories: 231

Ingredients

4 cups halved grape tomatoes
3 cups sprouted wheat berries
2 cups shelled fresh peas or frozen and thawed
1 cup coarsely chopped arugola
1/4 cup coarsely chopped fresh cilantro leaves
6 tablespoons fresh squeezed lemon juice
6 tablespoons cold pressed extra vrigin olive oil
1/2 teaspoon sea salt
1/4 teaspoon coarsely ground black pepper

Directions:

1. Place all of the ingredients in a large bowl and mix well.

2. Transfer the mixture to plates and serve immediately.

For a Change . . .
* For a creamier version of this dish, add 1/2 cup Cashew “Cheese”.

FYI . . .
Cilantro is a member of the carrot family and is also called “coriander” or “Chinese parsley.” Additionally, many ancient legends report that cilantro has aphrodisiac qualities.
