Potato Chips


Serves: 4

Ingredients

2 large russet potatoes cut into 1/8 inch rounds
2 tablespoons olive or canola oil
salt
pepper (optional)

Directions:

Preheat oven to 475 degrees. Toss sliced potatoes with olive oil and sprinkle with salt. Lay out in one layer on a cookie sheet. Cook about 30–40 minutes, turning once, until crispy golden brown. You may wish to sprinkle them with a little more salt and pepper. Eat hot (but careful, they’re really hot on the inside).
