Polenta


Serves: 4

Ingredients

1 cup polenta
4 cups low-salt chicken broth or water
salt
freshly ground pepper (optional)
olive oil (optional)
parsley or basil or sage (optional)

Directions:

Bring chicken broth to a boil. When it comes to a rolling boil, pour in polenta, stirring constantly. Lower heat and cook, stirring, about 4 or 5 minutes, until polenta reaches desired consistency. Serve drizzled with olive oil, freshly ground pepper, and sprinkled with fresh herbs.
