New Potatoes with Parsley


Serves: 4
Total Calories: 120

Ingredients

2 pounds new potatoes (halved if larger than 1 inch)
1/2 cup chopped parsley
1/4 cup olive oil
salt and pepper

Directions:

Cover potatoes with water in a pot and boil until tender (15–20 minutes). Check them with a fork. Drain and toss immediately with olive oil, chopped parsley, salt and pepper. They like a fair amount of salt. Serve hot.
