Potato Rolls

Ingredients

1 tablespoon yeast
1/4 cup warm water
1 cup mashed potato (instant may be used)
1/3 cup sugar
1/2 cup butter or oil
2 teaspoons salt
2 cups milk, hot
2 eggs, beaten
5 to 5 1/2 cups flour

Directions:

Dissolve yeast in warm water. Combine mashed potatoes, sugar, butter or oil, salt, and hot milk. Cool to lukewarm. Stir in beaten eggs and yeast. Add 3 cups flour and beat until smooth. Mix in remaining tlour to make a soft dough. Place in greased bowl and let rise until double. Punch down. Cover and place in refrigerator until needed. Spoon into greased muffin tins. Let rise until double. Bake at 375°F for 15 minutes or until lightly browned. Makes 24 rolls.
