Pasta e Fagioli Deliziosa

2 tablespoons olive oil
1 cup onion, diced
3 cloves garlic, minced
2 (14 1/2-ounce) cans diced tomatoes
1 (16-ounce) can Great Northern beans
3 cups chicken broth
1/4 cup fresh Italian parsley, chopped
1 teaspoon dried basil
1/4 teaspoon pepper
2 cups small shell pasta, uncooked


Heat oil in a 4-quart Dutch oven over medium heat until hot; add onion. Cook and stir for 5 minutes, or until onion is tender. Add garlic; cook and stir for one minute. Add undrained tomatoes, undrained beans, broth, herbs and pepper. Bring to a boil over high heat, stirring occasionally. Reduce heat to low. Cover and simmer for 10 minutes without stirring. Add uncooked pasta. Cover and simmer for 12 to 15 minutes, just until pasta is tender. Serve immediately.

Tip: Hang up an old-fashioned mini washboard where family messages, calendars and to-do lists can be easily found. Button magnets and clothespin clips will hold everything in place and add a dash of fun.
