Creamy Marinara Linguine

1 (16-ounce) package linguine pasta, uncooked
2 cloves garlic, minced
1/4 cup olive oil
1 (14 1/2-ounce) can petite diced tomatoes
1 (15-ounce) jar Alfredo sauce
1/2 cup chicken broth or milk
1 teaspoon dried Italian seasoning
1 teaspoon dried parsley
salt and pepper to taste

Cook pasta according to package directions; drain. Meanwhile, in a skillet over medium heat, sauté garlic in olive oil for 30 seconds. Add undrained tomatoes; heat through. Add Alfredo sauce and chicken broth or milk. Stir until heated through; add seasonings. Serve over cooked pasta.

Tip: For a delicious, healthy change from regular pasta, make “noodles” from zucchini or summer squash. Cut the squash into long, thin strips, steam lightly or sauté in a little olive oil and toss with your favorite pasta sauce. Squash can also be sliced thinly, steamed and used instead of lasagna noodles. Give it a try!
