Granola Bars

Ingredients

3 tablespoons butter
1/2 cup honey
2 cups oats
1 cup sliced or chopped almonds
1/2 cup walnuts
1/2 cup chopped pecans
1 teaspoon vanilla extract
1/3 cup raisins
1/3 cup cut up dates
1/3 cup grain sweetened milk chocolate chips (optional)

Directions:

In a large pot, combine all ingredients except for the dried fruits and chocolate chips. Mix together until the butter and honey are melted and all the oats and nuts are no longer dry. Add in the dried fruit and chocolate. The thing about granola is: there are no real “rules” about what should go in it! Feel free to change the nuts or add to these. I will often add in cashews, wheat germ, or sunflower seeds as well. (If you add more nuts and find that the mixture lacks “wetness” add 1 TBSP of butter and a spoonful of honey.) I always like to add in the chocolate chips. I am a firm believer in the fact that a little bit of chocolate goes a long way... Once the mixture is done spoon it into a lightly greased 9X9 or 11X7 pan. The smaller the pan, the thicker your granola will be and it may take a bit longer in the oven. Bake at 300° for 20-25 minutes. Cut into squares and store in an airtight container in the fridge. Just a reminder – while these are quite healthy, they are also very calorie dense so exercise self-control when helping yourself to a portion!
