Date Squares

Ingredients

1 3/4 cups oats
1 3/4 cups whole wheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup agave
1/3 cup soft butter
1/2 cup chopped walnuts or pecans (my preference is walnuts)
DATE MIXTURE
2 cups chopped dates
1 cup water
1/3 cup agave
1 teaspoon vanilla extract

Directions:

In a large bowl, combine oats, flour, baking soda, baking powder, and salt. Add agave, butter and nuts. Mix well until it resembles very thick cookie dough. Set aside 1 cup of the dough. Press the remaining dough on the bottom of a greased pan. If you prefer a thinner date square, use a 9X13 pan. If you like a thicker date square use an 8X11 or a 9X9. Spread the date mixture on top: To make the date mixture, in a saucepan combine all mixture ingredients. Mix all ingredients over medium heat, bringing to a boil. Reduce heat and simmer for a minute, stirring constantly. Spread the date mixture over the pressed dough in the pan. Sprinkle the top with the reserved 1 Cup of dough. Bake at 350° for about 20 minutes. The baking time could be shorter or longer depending on the size of your pan and the thickness of the squares. Date squares are ready when the dough sprinkled on top is beginning to turn a golden color.
