Coconut Brownies

Ingredients

1/2 cup coconut oil
1/2 cup unsweetened cocoa
2 eggs
1 cup coconut sugar (available at health food stores)
1 teaspoon vanilla extract
1/4 cup whole wheat flour
1 teaspoon baking powder
1/2 cup unsweetened shredded coconut
1/3 cup grain sweetened milk chocolate chips (optional)

Directions:

In a small saucepan, over low heat, melt coconut oil together with cocoa and mix well. Remove from heat and pour into a mixing bowl. Let it cool slightly before adding 2 eggs, beating well after each one. Add coconut sugar and vanilla. Add remaining ingredients: flour, baking powder, shredded coconut and chocolate chips, mix. Pour in a greased and floured 8X8 pan. Bake at 350° for 20-25 minutes. Brownies are done when they are still soft in the center and a bit jiggly. If these get overcooked they end up being too dry.
