Spam Pasta Salad

Ingredients

1 (12-ounce) bag pasta (veggie spirals are nice)
1/4 medium onion, minced
1 cup diced spam
1 (6-ounce) jar artichoke hearts, including juice
1 cup chopped cucumber or zucchini
1/3 cup Italian salad dressing (such as zesty Italian)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon oregano
sliced tomato, sliced hard-boiled eggs, olives, etc., for garnish

Directions:

Cook pasta according to package directions. Do not overcook. Rinse with cold water and drain well.

Place all other ingredients in a bowl and mix together. Add drained pasta and toss together. Chill. Decorate top with sliced tomatoes, sliced hard-boiled eggs, olives, etc.


Fun Fact: Hawaiians consume some 4.3 million cans of Spam a year. In fact, Spam is so popular there, it is sometimes dubbed "The Hawaiian Steak." Spam was introduced to the islands during U.S. military occupation in World War II. Surpluses of Spam from the soldiers’ supplies made their way into native diets. One popular Spam dish in Hawaii is Spam musubi, in which cooked Spam is combined with rice and nori seaweed.
