All American Buffalo Chicken Wings

Blue Cheese Dressing:
4 tablespoons minced yellow onions
2 garlic cloves, minced
1/4 cup minced parsley
2 cups mayonnaise
1 cup sour cream
2 tablespoons fresh lemon juice
2 tablespoons white vinegar
3/4 cup crumbled blue cheese
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
Chicken Wings:
40 chicken wings
2 cups vegetable oil for deep-frying
1 stick butter
1 small bottle hot sauce
40 celery sticks


Blue Cheese Dressing:
Combine all ingredients in bowl; cover and chill.

Chicken Wings:
Disjoint wings at elbow and discard tips. Heat oil in deep-fryer to 375°. Fry wings until crisp and golden, about 8–10 minutes. Drain on paper towels. Melt butter in a saucepan and blend in the bottle of hot sauce. Place chicken wings in large bowl and pour hot butter sauce over wings. Toss well to coat. Arrange wings on platter and serve with celery sticks and the bowl of Blue Cheese Dressing for dipping.

Fun Fact: “Oh, give me a home where the buffalo roam. . . . ” These lyrics to an 1873 cowboy ballad still hold true in Utah. Antelope Island, the largest island in the Great Salt Lake, holds populations of pronghorn antelope, porcupine, badger, coyote, bobcat, bighorn sheep, American bison, and millions of waterfowl. The bison were introduced to the island in 1893. The remote Henry Mountains in southeastern Utah is also home to a large herd of bison.
