Mix all dry ingredients together well. Beat eggs lightly with a fork and then mix well with 1 cup buttermilk. Mix dry mixture with egg/buttermilk mixture. Mix well with a hand beater, not a machine mixer. Add melted butter to mixture and mix. Add buttermilk to mixture until it is the proper thickness for cooking.
Fry in a nonstick skillet heated between medium-high and high. The skillet is ready for frying when drops of water bounce around and quickly evaporate.
