Cheese Blintz Casserole

Ingredients

Filling:
2 cups small-curd cottage cheese
2 egg yolk
1 tablespoon sugar
1 (8-ounce) package cream cheese, softened

Batter:
1 1/2 cups sour cream
1/2 cup orange juice
6 eggs
1/4 cup butter
1 cup all-purpose flour
1/3 cup sugar
2 tablespoons baking powder
1 teaspoon cinnamon

Directions:

Filling:
Grease a 9x13-inch casserole dish. Beat together all Filling ingredients; set aside.

Batter:
Combine all ingredients in bowl or food processor. Beat or blend until smooth. Pour half the batter into the casserole dish. Drop Filling by teaspoonfuls over Batter; spread evenly (the Filling will mix slightly with the Batter). Pour remaining Batter over Filling. Cover and refrigerate 2 hours or overnight. Bake, uncovered, at 350° for 50–60 minutes, until light golden brown. Serve with additional sour cream and preserves.


Fun Fact: The legend of the Chicago Fire: After months without rain, Chicago was as dry as a tinder box. On the night of October 8, 1871, Mrs. O’Leary, a boarding housekeeper, went to the barn to milk her cow. She left her lighted lantern in the barn and the cow kicked it over, igniting straw in the stall. The fire took 2 days to control, killing 250 people and destroying much of the North Side of Chicago. Though the fire was one of the largest U.S. disasters of the 19th century, the rebuilding that began almost immediately spurred Chicago's development into one of the most populous and economically important American cities. Ironically, the Chicago Fire Academy was built on the fire’s point of origin in 1956. A 33-foot bronze sculpture of stylized flames entitled “Pillar of Fire” was erected on the site in 1961.
