Fresh and cooked table salsas and sauces are absolutely basic to Mexican cooking, as are the many condiments that enhance the flavors and adorn almost every dish. Guacamole, pickled onions, spicy red and green table sauces, seasoning pastes, dry spice rubs, and creative fruit and vegetable salsas, all provide a sensory spark with every bite. Complex cooked sauces, such as moles and pipianes, are also integral to Mexican cooking--so important that it's said, "In Mexican cooking, the sauce is the dish." Moles (from molli, the ancient Nahuatl Aztec word for mixture or sauce), are the special sauces made of chiles, nuts, seeds, herbs, spices, tomatoes, tomatillos, bread, tortillas, and sometimes chocolate. Moles are celebration dishes and are made for special occasions, such as weddings and important holidays.
Sauces called pipianes get their name from pumpkin seeds (pepitas) that are toasted and finely ground to give the sauces a rich, nutty flavor. This chapter has recipes for several basic moles and pipianes that are best made ahead for convenience and better flavor. The poultry or meat usually served with them can be cooked the day the dish is to be served and then simmered with the sauce.
There are more than 90 recipes in this chapter that give Mexican dishes their unique and distinctive flavors, textures, and colors. Although there are no absolute distinctions among the different types of Mexican "salsas," for convenience, most of the recipes in this chapter are categorized either as salsas and table sauces or cooking sauces.
Salsas resembling chopped salads, such as Fresh Salsa Mexicana, and smooth table sauces such as Classic Guacamole are usually served cold or at room temperature when accompanying foods. Cooking sauces such as Basic Cooked Tomato Sauce are usually served hot over meats, poultry, and other foods like enchiladas. Of course, if you are seeking a certain flavor for a dish, you can pair almost any salsa or sauce with any dish.
