Garlic Shrimp and Shallots |

2 pounds shrimp
6 shallots, peeled and sliced
6 cloves minced garlic
1/2 cup vegetable oil
1 teaspoon salt
1 teaspoon cayenne pepper
1/2 cup lime juice

Slice shrimp in half lengthwise, but do not peel them. Mix together shallots, garlic, 1/3 cup oil and salt. Add to shrimp and stir until they are completely coated. Sprinkle on cayenne pepper and mix well. Refrigerate for 1 hour. Heat the rest of the oil in a large nonstick skillet. When oil is very hot, but not smoking, add shrimp and sauté until they just turn pink, about 3 minutes. Squeeze in lime juice, stir and serve immediately.
