_ cups water
_ pound red potatoes peeled and cut in 1/2 " cubes (about 2 cups)
_ onions medium, chopped
_ teaspoons chicken bouillon
_ cup heavy cream
_ teaspoons chives minced fresh
1. In a large saucepan place water, potatoes, onions and bouillon. Bring to a boil; reduce heat, cover and simmer for 30 to 40 minutes or until vegetables are tender. Place half at a time in a blender container or a food processor bowl; cover and blend or process until smooth. Cover and chill overnight.
2. Stir in heavy cream and chives. Serve in chilled bowls.
