Wild Rice Salad

Ingredients

SALAD
1 cup wild rice
1 (8-ounce) package Morningstar Farms® Meal Starters veggie steak strips
1 (6-ounce) jar marinated artichoke hearts, drained and halved
1 medium green bell pepper, chopped
3 green onions, chopped
1 cup red seedless grapes
1/4 cup slivered almond

DRESSING
1/2 cup light mayonnaise
1/2 cup plain yogurt
1 teaspoon vinegar
1 teaspoon sugar
1 teaspoon celery seed
1 teaspoon dried parsley
1/2 teaspoon pepper

Directions:

1. Prepare wild rice according to package directions.

2. Prepare Morningstar Farms® Meal Starters™ Steak Strips according to package directions.

3. In a medium bowl, whisk together mayonnaise, yogurt, vinegar, sugar, celery seed, parsley and pepper. Add rice, artichoke hearts, bell pepper, onion, grapes and Morningstar Farms® Meal Starters™ Steak Strips. Stir until evenly coated with dressing. Cover and refrigerate for at least one hour.

4. Before serving, sprinkle slivered almonds over top of salad.

NOTE: Time to table does not include cooking time for wild rice.
